This super healthy smash cake is loaded with healthy & naturally sweetened dates. With no flour or sugar or milk, this makes a perfect choice for babies. And guess what it hardly takes 15 minutes and I love the fact that the cake batter can be made in just one bowl or a blender with just a few ingredients. No special skills required and is super easy. This was a super hit in our house and my daughter enjoyed it to the core.

What you need to make these easy healthy smash cake recipe?

Here are some simple ingredients that are mostly available in your pantry:

  • Dates – Being the main ingredient for this recipe, dates act as natural sugar, gives colour and a healthier alternative. I have used a generous cup of Medjhool dates soaked in hot water for up to 2 hours depending on how hard they are. Alternately, you can also use the homemade dates syrup.
  • Eggs – An essential part of the recipe that helps to get a soft and fluffy texture. You can replace eggs with banana and flaxseed to get the same texture. I have used 3 eggs in this recipe. You can replace it with one banana and 1/2 cup flaxseeds.
  • Peanut Butter or Almond Butter – A dairy-free alternative to get the cake dough consistency and adds flavour to the cake. I have used a generous cup of homemade peanut butter in this recipe. Almond butter works best if there is any peanut allergy.
  • Baking Soda & Salt – A tbsp of baking soda and a pinch of salt acts as a leavening agent helping in raising while baking the cake.
  • Vanilla Essence – I have added a drop of vanilla essence to give flavour and aroma to the cake. You can choose to use your preferred flavour.

Instructions to make Healthy First Birthday Smash Cake

My favourite part of this easy healthy smash cake recipe is the making of the cake. It is completely mess free as you can just toss in all the ingredients into the blender and give it a couple grinds to make the cake batter.

  • In a blender, add soaked dates along with hot water and blend well till it is a smooth paste.
  • To this add rest of the ingredients and mix well or give a grind in the blender to form a smooth cake dough.
  • Preheat oven for 350 degrees.
  • Pour in the cake dough into a greased 8 inch cake pan.
  • Optionally you can choose to add nuts, raisins, or cut fruits to it before tossing it into the oven.
  • Bake the cake for about 15 minutes until you see the brown crust.
  • Cooldown completely and you can choose to use your favourite frosting. I have used a light chocolate ganache frosting.
  • Let your baby enjoy smashing and digging into this healthy cake!
