Creamy Spinach Pasta Recipe

- 250 grams Pasta
- 1 cup Spinach
- 1 whole Tomato
- 1 clove Garlic
- 1/2 stick Butter
- 1 cup Cheese
- 1 tbsp Cream
- 1 pinch Whole-wheat flour
- 1 tbsp Oregano
- 1 tbsp Pepper
- 1 tbsp Salt
Cook pasta in an instant pot for 3minutes with a 1:1 pasta water ratio or as per the instructions given behind the pasta container.
Meanwhile boil spinach leaves for couple minutes in water until it is cooked.
Grind a tomato, cooked spinach, a garlic clove in a food processor.
In a pan, melt butter and fry a pinch of whole wheat flour for a few seconds.
To this, add the grind paste of spinach and tomato and cook until you see it boil.
Add a spoon of cream, cheese and toss in the cooked pasta and salt.
Add pepper and oregano seasoning.
Serve it hot with some parmesan sprinkled.
- You can add corn to this recipe if your baby likes it.
- You can also try the spinach pesto version of this recipe which is also amazing.
- Try using mini pasta like macaroni or ditalini if you are making it for a baby or toddler.
- You can make the vegan version or dairy-free by replacing butter with olive oil, choosing vegan pasta and eliminating cream.
