- 2 Carrot
- 2 cup Milk
- 1/2 cup Sugar
- 1 pinch Cardamom
- Nuts (Soaked almonds & powdered nuts)
Wash and peel the skin of fresh carrots. And use an instant pot to steam them. Alternately you can even cook them on stovetop until it is soft.
Soak almonds in warm water for up to 4 hours.
Use a hand blender or mixer grinder to blend carrots and almonds well.
In a pot, warm milk on a medium flame. If using almond milk, mix the carrot blend before warming it.
Add the blended mixture to the warm milk and bring it to a boil. Now add half a cup of sugar optionally and garnish with cardamom.
You can serve this kheer hot or cold.
