Ingredients
  

  • 1 cup oat/ whole wheat/ all-purpose flour
  • 1 egg
  • 1/2 cup mashed ripe watermelon
  • 1 tbsp butter

Instructions
 

  • In a medium bowl, mash the watermelon.
  • Beat the egg in the mashed watermelon and mix well.
  • Add in oat flour or all purpose flour and mix well to make the pancake batter.
  • Heat a non-stick skillet over medium heat and lightly coat it with butter or non-stick cooking spray.
  • Pour the batter onto the skillet to make the pancake.
  • Cook the pancakes until small bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
  • Serve warm with a drizzle of honey or a dollop of Greek yogurt, if desired.
