- 1 cup oat/ whole wheat/ all-purpose flour
- 1 egg
- 1/2 cup mashed ripe watermelon
- 1 tbsp butter
In a medium bowl, mash the watermelon.
Beat the egg in the mashed watermelon and mix well.
Add in oat flour or all purpose flour and mix well to make the pancake batter.
Heat a non-stick skillet over medium heat and lightly coat it with butter or non-stick cooking spray.
Pour the batter onto the skillet to make the pancake.
Cook the pancakes until small bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
Serve warm with a drizzle of honey or a dollop of Greek yogurt, if desired.
