Mung Bean Salad

Simple Healthy & Delicious! This sprouted mung bean salad is a healthy snack you can make for toddlers & kids. Loaded with fresh veggies, tangy lime and pepper, it gives a magical combination of flavours. With loaded protein and fibre content in them, they make the best snack for kids.

- 1 (250ml) cup Sprouted Moong Beans To sprout Moong beans - soak them overnight, dry them and store them in an airtight container in a warm place. Or use instant pot in yogurt mode to help sprout the beans well. I have used a generous cup of sprouted moong beans that is steams for 2 minutes in instant pot.
- 1 cup Carrot (grated)
- 1 cup Cucumber (Chopped)
- 1 cup Pomogranate
- 2 tbsp Lemon Juice
- 1 tbsp Pepper
- 1 tbsp Salt
- 1 tbsp Chat Masala
- Other optional ingredients - Tomato, Corn, Beetroot, Onion, Cilantro/ Mint/ Parsley, Lettuce
Wash sprouted moong beans and steam them in instant pot for 2 mins.
Add sprouted moong beans in a mixing bowl.
Add grated carrots, chopped cucumbers, pomogranate and all other ingredients.
Mix them well and serve immediately. Tastes best when it is chilled.
- Optionally add green chutney or chilli powder depending on the taste preference.
- Alternate ingredients can be added to make this mung bean sprout salad.
- Sprouted Moong salad can be stored in airtight container for up to 5 days.
- Alternate ways to eat them:
- Add puff rice and mixture to the salad and make a healthy bhel puri.
- Add yogurt and make a chaat that can be enjoyed.
- Add it inside pani puri making it healthy.
- Add crispy totillas and add them in tacos making it healthy.
- Add it on chapati or dosa making it a roll.
