To prepare Bean filling - soak black beans overnight or for up to 8 hours and pressure cook in instant pot for 3 minutes.
Saute onion, tomato, green peppers and corn in a pan.
Add cooked black beans to it with a cup of water and let it cook well for a few minutes.
Add salt, pepper, chilli powder and mix well.
Mash the black bean filling while its cooking on the stove.
Meanwhile, prepare guacamole using mashed avocado, lemon, salt and pepper.
Prepare avocado flatbread using avocado and wholewheat flour. Check out the detailed avocado flatbread recipe here. To this flatbread, smear sour cream. Add the black bean filling, guacamole and cheese.
Cook well on both side until cheese melts.
You can cut the quesadillas into shapes that is easy to hold with tiny hands and serve them warm or cold.
You can store the black bean filling and giaamole in refrigerator for up to 3 days.
