The 3 Ingredient carrot Kheer is quick & easy to make this recipe with just carrots, milk and cardamom with or without sugar (preferred for babies under 12 months) and optionally nuts added. I highly recommend using fresh carrots and using an instant pot to steam them. It is a great recipe to make for an occasion and is loved by kids with its orange color and sweet taste.
My little one gobbles it without complaining. And it is a great way to introduce self feeding by giving it in a tumbler. You can choose to make this using almond milk for babies who is not introduced to dairy or to make it vegan. Make this simple carrot payasa with just a few ingredients available in your pantry.
What do you need to make 3 ingredient carrot payasa?
All you need to make this recipe are:
- Carrot – Use generous amount of carrots. Being a main ingredient carrot adds color and taste to this recipe. I have used 2 big carrots in this recipe.
- Milk – You can add whole milk or condensed milk or almond milk as per your preference. Milk makes carrot kheer thick and creamy. I have used 2 cups of whole milk in this recipe.
- Sugar – It is optional to use sugar. Carrots are generally sweet so even without sugar this carrot kheer tastes good. I have added 1/2 a cup of sugar in this recipe.
- Cardamom – Cardamom adds a nice flavor to kheer. A pinch of powdered cardamom is added.
- Nuts – I use a bunch of almonds soaked in water and made a ground paste to make the payasam creamy and healthy. You can also choose to add powdered nuts (almonds, pistachios, cashews) on top while serving.
Instructions to make Carrot Payasam Recipe
Making of this carrot payasa is simple an easy.
- Wash and peel the skin of fresh carrots. And use an instant pot to steam them. Alternately you can even cook them on stove top until it is soft.
- Soak almonds in warm water for up to 4 hours.
- Use a hand blender or mixer grinder to blend carrots and almonds well.
- In a pot, warm milk on a medium flame. If using almond milk, mix the carrot blend before warming it.
- Add the blended mixture to the warm milk and bring it to boil. Now add half a cup of sugar optionally and garnish with cardamom.
- You can serve this kheer hot or cold.
