This fun recipe can be made within 10 mins! Prepping black beans with veggies sauteed, adding avocado and cheese to avocado flatbread made using avocados and wheat flour. This makes a quick and healthy family meal that you can enjoy for lunch, dinner or snack. These homemade quesadillas are easy to pack in lunch box or for travelling.

While I have tried making black bean quesadilla using the store bought tortillas, I wanted to try on these avocado flatbreads that I make at home for kids. This healthy quesadilla ideas was a great success and my picky eater gobbled them without complaining.

  • Black bean filling – A rich creamy protein filled black bean filling that I make is my kids favourite. I sometimes keep a bowl of black bean filling aside and give them with tortilla chips and they love to dip it in and eat. I sneak in all kinds of veggies in this and mash them well so if you have a picky eater – do try this black bean dip.

  • Guacomole – More avocado inside makes my mommy heart make this recipe more often. The secret for my guacomole is the extra dash of lime and I have toddlers who eat avocado and guac all day in my house. So naturally I have homemade guac all the time in my refrigerator.

  • Sour Cream (optional) – You can smear a spoon of sour cream or even give them to dip in but this recipe tastes great without it as well.

  • To prepare Bean filling – soak black beans overnight or for up to 8 hours and pressure cook in instant pot for 3 minutes.
  • Saute onion, tomato, green peppers and corn in a pan.
  • Add cooked black beans to it with a cup of water and let it cook well for a few minutes.
  • Add salt, pepper, chilli powder and mix well.
  • Mash the black bean filling while its cooking on the stove.
  • Meanwhile, prepare guacamole using mashed avocado, lemon, salt and pepper.

  • To this flatbread, smear sour cream. Add the black bean filling, guacamole and cheese.
  • Cook well on both side until cheese melts.
  • You can cut the quesadillas into shapes that is easy to hold with tiny hands and serve them warm or cold.
