Moong dal or Mung bean is a healthy bean & one of our favourites at home. Sprouting it makes it healthier and can be used in salads, curries, dal, or even just sundal by tempering the sprouted mung beans. You can also add these moong beans to the protein dosa. The sprouted moong bean salad is delicious and also filling. This makes a good side dish, appetizer or even a quick meal for your family.

The best part is this recipe can be extremely versatile. Based on what your picky eater likes, you can add or remove any ingredient. My toddlers love this recipe. And I steam sprouted beans when I am giving it to kids as recommended by NHS.

Here are what you need to make this delicious salad:

  • Sprouted Moong Beans – To sprout Moong beans, soak them overnight, dry them and store them in an airtight container in a warm place. Or use instant pot in yogurt mode to help sprout the beans well. I have used a generous cup of sprouted moong beans that is steams for 2 minutes in instant pot.
  • Carrot – Carrots are great for kids and highly nutritious. I have used a cup of grated carrots.
  • Cucumber – A cup of chopped cucumbers help with flavour and nutrition.
  • Pomogranate – Pome is a super food for kids with all the nutrition. I have added a cup full of pomogranate to this salad.
  • Lemon Juice – A couple spoons of lemon juice adds tangy taste and flavour to the mung bean salad.
  • Pepper – A spoon of pepper powder can be used to add flavour to the sprouted moong salad.
  • Salt – As per the taste.
  • Chat Masala – A spoon of chat masala adds flavour and a tangy taste.

  • Wash sprouted moong beans and steam them in instant pot for 2 mins.
  • Add sprouted moong beans in a mixing bowl.
  • Add grated carrots, chopped cucumbers, pomogranate and all other ingredients.
  • Mix them well and serve immediately. Tastes best when it is chilled.
